Utilization of isolated
bacteria from civet feces for coffee fermentation is currently being developed.
However, the bacterial isolates still require special treatment before ready to
ferment the coffee. Therefore, this research was conducted to produce dry
starter of bacteria isolates that easy to be applied. This research involved
proteolytic bacteria and cellulolytic bacteria to support the fermentation. The
purpose of this study was to obtain the best concentration of dry starter for
fermentation of coffee beans to produce coffee which have equivalent quality to
civet coffee. The concentration of dried starter added in the process of
fermentation was 5%, 10%, and 15% with coffee beans and shell of coffee
(grinded and sifted) as filler material. Based on total sugars, protein, and
weight loss of liquid fermented, the best treatment is the addition of 15%
dried starter with coffee shell as filler and being fermented in 2 days.
Fermented coffee has influenced the decreasing of caffeine and oxalic acid as
well as increasing levels of lactic and butyric acid. These results relatively
showed that fermented coffee using dried starter has equivalent quality with
civet coffee.
